It is also simple to maintain. Cost Sustainability Quality YieldCost: Cost Herbs are simple to plant, easy to maintain and even easier to harvest. The in-house grown herbs would cost significantly less then store bought.Sustainability: Sustainability What culinary professionals are learning is that becoming more sustainable is easier than they thought. Even in cities, chefs are proving that you don’t need a farm in your backyard to make more environmentally conscious decisions.Quality: Quality In growing the restaurants own herbs the quality and freshness cannot be compared.Yield: Yield The initial cost of the herbs is very economical compared to the yield of the herb plants. Disadvantages : Disadvantages There are not many disadvantages to having an herb garden for the restaurant.
