Gur (Jaggery) is a natural, traditional sweetener made by the concentration of sugarcane juice. Gur is consumed mostly by the rural population in India which is a natural mixture of sugar and molasses's. With enhanced standard of living and higher income, the Gur demand has shifted to white sugar. Gur can be defining as a honey brown colored raw lump of sugar. It contains all the minerals and vitamins present in sugarcane juice and that is why it is known as healthiest sugar in the world. At the time of production of sugar it requires a mix up of chemicals like sulphure- dioxide, lime, phosphoric-acid, formic-acid and bleaching agents, and that is why all the contents of sugarcane cannot be found in sugar, where as Gur has all the contents and even the scientists have proved that all the essential vitamins and minerals are missing from sugar as compared to Gur. In Ayurvedic way of medicine it is used as medicine, blood purifier and also it prevents disorders of bile. INTRODUCTION

We are going to get Jaggery from areas around Gulbarga, Bidar,Humnabad, Aland, and Afjalpur as well, from these places we could get jaggery on regular bases as well place the order as per our requirements so that farmers will be able to supply it on time. Since we make an agreement or by paying in advance to the farmers in those areas, there will be no shortage of stock of the jaggery, we will be getting it for almost 6 to 7 months. Farmers will be guided to produce such jaggery that it should be up to the mark, as per the quality standards and there will be no excess of adding chemicals in the jaggery as it may be cautious/harmful for human being.

JAGGERY DEMAND The usage of Jaggery has become very high in the recent days.  The reason for the increase in demand of Jaggery is health consciousness in the people and the increase in number of Diabetic patients.  The public response will be more for the Jaggery which is prepared in the form of powder which is a free flow like sugar.  Jaggery is been used in the areas like Preparing of Ayurvedic Medicines, Gross for the animals, Preparation of the sweets.

Let us go in detail about each and every step involved. Step1: Fresh sugarcanes are cut from the fields, canes are cut in such a way that the head and tail are chopped off. They are carefully brought in a plastic sack, to the place where they are made juice. Step2 : To extract juice from the sugarcane, they use a small power run machine, where at one side four or five canes are fed, and at the other end, extracted sugar cane juice is directly feed to the vessel. Step3 : Next step involved is boiling the extracted juice, juice is feed to a large big iron vessel, which is usually called as kadai . heating unit of the vessel is set up in such a way that, at a single stretch two vessels are boiled, heating unit is nothing but a small pit above which this vessel is placed, there is a man who keeps on adding fuel to the heating unit from a small opening, fuel to the heating unit is just the extract which is obtained after juice has been taken from the canes, these extract are dried in sunlight and used as a fuel for heating.

Step4 : When juice becomes a semisolid paste, small quantity of sodium carbonate is added as a reducing agent, which helps in making Jaggery balls. Step5 : After stirring well until the juice becomes a semisolid paste, the paste is feed to a iron tray. With the help of a long wood stick, at one end which contains a flat block they stir well again in the tray, until more thickening comes. Step6 : With help of a wet cloth, hot Jaggery paste are made as balls precautions are taken, to prepare the balls as fast as possible, as the paste gets to the solid state with in a short span of time.

Benefits of Jaggery The process of making jaggery from the plant sources, does not involve any chemical agents and hence all the natural mineral salts are retained in jaggery. Jaggery is known to have various medicinal properties and other health benefits. Jaggery as a Cleansing Agent Jaggery acts as a cleansing agent for our body and effectively cleans the respiratory tracts, food pipe, lungs, stomach and intestines. It helps the body to get rid of the unwanted particles and thus provides relief from constipation. Jaggery as a Digestive Aid Jaggery proves as a great digestive aid and speeds up the process of digestion. Eating a few grams of jaggery after a heavy meal is often recommended for those having problems with normal digestion. In the body, jaggery activates the various digestive enzymes and itself gets converted to acetic acid, thus speeding up digestion. Migraines, the most painful and uncomfortable type of headaches can be relieved to a large extent by jaggery. Jaggery is a rich source of iron and is therefore, very good for anemic people, as it increases the hemoglobin level in the blood.

A mixture of jaggery and dry ginger powder taken with warm water can stop hiccups. Jaggery helps in regulating blood pressure and also helps the body to get rid of all the toxins. Jaggery is loaded with many essential nutrients such as proteins, vitamins and minerals, that play a key role in many life processes. Jaggery has potassium content that may help in reducing bloating and water retention.
