Matthew Kenney Academy online Advanced Raw Cuisine I’m Roberta and I’m from Italy. I attended Advanced Raw Cuisine course February 2014. For my project I thought an important moment of the day: breakfast time! I liked the idea the cicle of seasons, so I created 4 cultured yogurt, combined with 4 fresh fruit preparations and 4 raw granola. I enjoyed a lot and I found some more yogurt good of others, some I had to balance the ratio between acid and sweet. I thought of the glass packaging maybe expensive but may stimulate the return of the customer, "if you return the empty jar tomorrow we will let you pay only the content” It wasn’t easy manage all recipes was required a lot of attention. I found out that you will get different results from fermentation, the hazelnuts are quite acidic as well as the almonds. I’m happy for the final result though perhaps is not easily marketable. There are a explosion of flavors and aromas for each season and the sensory memories are revived by the taste of live and healthy food.
