Production & Post Harvest Scenario Agriculture contributes about 13% of GDP, employs 57 % workforce and sustains approx over 65 % of the population India produces about 260 million tons of food grains and more than 285 million tons of fruits and vegetables and ranks second in world Low level of processing of fruits and vegetables at only 3-5% and losses range from 6 - 18 %. Food processing is employment intensive, creates 1.8 jobs directly and 6.4 indirectly for every US$ 25000 investment

Coconut Novel Value Added Products Milk: Kernel chopping and cream extraction Nuts are deshelled, pared and then routed to a chopper that assures a very fine particle size. The chopped kernel is sent to the helicoidal extractors or pulpers where the coconut cream is extracted. It can be further processed as virgin cocnut oil or tetrapacked in 200 ml packs to consumers Water: extraction and filtration Coconuts are perforated and positioned to recover water. Extracted coconut water is fed to a filtration system to remove the fragments of the shell originated by the perforation process. The product is extremely sensitive and should be immediately cooled down to 2-4°C in order to avoid microbiological and chemical changes.

It is is very creamy and gelatinous and considered a functional food.

CPCRI Method of Neera Collection Neera  is a sweet oyster white, translucent, and highly nutritious extract collected by slicing the spathes of  coconut trees. It is a sugar containing juice and a rich natural source of minerals, vitamins and amino acids. Neera tapping is 8–10 times more profitable than selling nuts. Other traditional  uses  include the removal of tapeworms and other intestinal parasites by swallowing a few teaspoons of  powdered areca nut , drunk as a decoction, or by taking tablets containing the extracted alkaloids.

Kaju Katali and other cashew powder using sweets are becoming popular

Processing of Cocoa Beans Heaps can be used to  ferment  any quantity from about 25kg to 2,500kg of  cocoa beans . The  fermentation  usually lasts about five days and some farmers will mix the  beans  on the second or third day. Another smallholder method is to use baskets, lined and covered with leaves, to  ferment  the  beans .

Recommendations:

Recommendations Incubation facility with pilot plants for EDP on each of these products be established at 4-5 places in the state for hands on training of upcoming entrepreneurs. Products like tetra packed coconut milk, pasteurized coconut pulp, bottled tender coconut water, home made chocolates, cryo ground spices processed by small scale entrepreneurs be introduced in PDS and departmental stores to promote this sector
