When in doubt - throw it out! * Proper food handling is all about reducing the spread of bacteria. Keep raw meat and fish away from other food Wash all produce using a mild vinegar solution Use paper towels to clean utensils or counters after prepping raw meat and fish. 3. How We Cook : 3. How We Cook Cook thoroughly!! Marinate meats in the refrigerator. IF you use the marinade for dipping sauce, be sure to boil it for at least 1 minute. Don’t return cooked meats to the plates that held them when they were raw. 4. Serving & Storing : 4. Serving & Storing Put hot foods on heating trays. Cold foods go on ice! Do not leave your food out for more than 1 hour! Just replenish from the kitchen. Keep the fan on to avoid flies or other bugs. Cool rapidly when moving the food into the fridge!
