Slide 2: 

8 oz. dry kidney beans1 lb. ham hock1 lb. soup bone1 onion, chopped2 whole cloves1 c. celery1/2 green pepper1 cubed potato12 oz. Portuguese sausage (linguica)3 peppercorns1 bay leaf8 oz. tomato sauce1 sm. Cabbage Soak beans overnight in 1 quart water and 1 teaspoon salt. Drain. Add remaining ingredients except sausage and cabbage with 8 cups water. Simmer partially covered 4 to 5 hours adding water if need. Add sausage and cabbage. Simmer 30 minutes. Remove ham hock and soup bone, pick off meat and return to soup. Serves 10.

4 qts. water1 1/2 to 2 lbs. piece of meat or shank1 lb. chourico2 lbs. chopped kale2 c. diced potatoes1 can white kidney beansSalt to taste Cook meat and chourico with water until almost done. Add more water to cover meat and add all the vegetables and cook until vegetables are about ready and add beans. Cook for a short time; longer to blend. Season to taste. Alphabet or elbow macaroni may be used in place of beans.
