I’m Sorry - I Can’t Eat That Many clients come with food preferences, intolerances and allergies. Whilst working on the underlying causes (adrenal insufficiency, fat deficiency, bile insufficiency, lack of pancreatic enzymes…) you need to be able to suggest nourishing alternatives that don’t add to the problem.

Soya: 

Soya Soy is the most common substitute for dairy and often for meat. Raw soy is full of phytic acid that binds with nutrients in the gut. Raw soy contains potent phyto oestrogens that mimic natural reproductive hormones and disrupt the endocrine system

Soya: 

Soya Soya is also a goitrogen - inhibits thyroid function Traditionally only consumed fermented as miso, tamari, tempeh, fermented tofu Fermentation removes phytates, transforms phytoestrogens, increases vitamins K, B and C and makes soy more digestible.

Dairy Intolerance: 

Dairy Intolerance Dampness causes mucous - this may look like dairy intolerance. Look at sugars and fats for this. People can be intolerant to lactose (milk sugar) or casein (milk protein) or both! Butter contains neither of these. Cream only a small portion. Most adults do better on fermented dairy

Alternatives to Dairy: 

Alternatives to Dairy Oat milk can be bought or made at home by soaking oats with a teaspoon of lemon juice & pinch of sea salt for 24 hours , adding a teaspoon of maple syrup or raw honey and blending until smooth. Strain through muslin and use the pulp for porridge. Keeps 4 days.

Alternatives to Dairy Rice Milk is very fast release and should be used sparingly. Nut milk is nutritious - although expensive! Clients can make their own. Cashews make a great cream substitute.

Alternatives to Butter: 

Alternatives to Butter Some people just can’t tolerate butter or are vegan. Coconut oil can be used in cooking / baking. Avocado, nut butter, hummus, duck fat, dripping, aioli, creamed coconut, cashew cream. No Margarine!

Goat & Sheep Dairy: 

Goat & Sheep Dairy Many people tolerate goat or sheep dairy due to the smaller fat molecules. Encourage dairy intolerant people to try butter or ghee as it is usually well tolerated. Goat butter is easy to digest. Allergies must be respected - no dairy until you have positive evidence to the contrary.

I Can’t Digest Fat! Stools that float or reflux. Bile is produced from endogenous cholesterol. A liver under stress may not produce enough cholesterol to synthesise bile. A lazy gall bladder may not release the bile. Start by supporting the liver.

Still Can’t Digest Fat!: 

Still Can’t Digest Fat! Look at pancreatic enzymes - lipase production may be low. Or the gut lining may be covered in mucous plaque which doesn’t allow the lipase through. Vit B1 deficiency can lead to low stomach acid. (Reduce sugar/refined carbs) Include foods rich in zinc & magnesium & B vits (broths, red meat, broth, organ meats, egg yolk, whole grains, fermented foods).

Easy To Digest Fats: 

Easy To Digest Fats Recommend that they only eat butter and egg yolk as their fat. Meat should be slow cooked, never fried. Sauerkraut juice, or beet kvass supplies probiotics and enzymes. Raw vegetable juice supplies enzymes for digestion and bioflavanoids to stimulate bile production - esp with a little papaya or pineapple added .

Allergies, Asthma & Inflammation The spleen and adrenal glands are the main organs that need support. Spleen energy regulates the boundaries, rhythms, it is the time keeper.(hay fever, asthma, PMS). Adrenal glands produce hormones that regulate inflammation and mineral / fluid transfer across cell membranes

Adrenal Insufficiency: 

Adrenal Insufficiency Asthma, allergies and eczema can all result from adrenal cortex insufficiency - low cortisone. Low glucocorticoid = hypoglycaemia, fatigue and chronic inflammation (eczema) Mineralocorticoid deficiency = salt imbalance / oedema Symptoms of low sex hormones also result = hirsutism, irregular menses, osteoporosis or decline in libido

Fat Deficiency = Dehydration Dehydration can often result from low fat intake making us thirsty. Because cells are not strong, they struggle to contain the water and tissues become swollen and boggy. Hay fever and asthma are part of this picture.

Supporting the Spleen Ceanothus ø -6x, Quercus ø , spleen sarcode 3-6x (if you can get it) Slow cooked food, braised meats, bone broths, orange vegetables, dates Massage, dancing, walking barefoot, cuddling, stretching. Crucial in Chronic Fatigue

Chronic Fatigue: 

Chronic Fatigue Emphasise slow burn foods to maintain energy and warmth Support spleen (ceanothus): slow cooked foods, orange vegetables, soups Fermented veg & beet kvass daily Add raw egg yolk and butter to food Avoid cereals & processed food - small amounts of sourdough & fermented grains ok.

Supporting Adrenal Cortex When adrenal medulla is constantly stimulated by caffeine or sugar the adrenal cortex becomes exhausted by overproduction of healing corticoids. All inflammation will benefit from a caffeine free diet.

Gluten Free Many choose gluten free as the healthy alternative - but gluten free can often mean highly refined. Many people develop insulin resistance after following a gluten free diet using commercial products. Good alternatives to wheat are spelt & rye, but they are not gluten free. Encourage patients to eat less grains and more starchy vegetables, such as carrots, beets, parsnips, squash, sweet potatoes, celeriac.

Coeliac Disease Steer coeliacs away from grains until their gut has healed and then introduce fermented whole grains and nut flours. Teff , buckwheat, brown rice , quinoa, chestnut, amaranth, millet, carob, almond, nut meals, starchy veg Give them a gluten free grains handout.

Coeliac, Diabetes and Thyroid: 

Coeliac, Diabetes and Thyroid Many coeliacs develop diabetes or thyroid problems - often Hashimoto’s Important to help them regulate their blood sugar with lots of veg, fats and high quality protein. They may be low on B vits, chromium, and magnesium (all found in: animal foods, whole grains, eggs, vegetables, (chromium) molasses, (magnesium) bone broth, (B6 raw animal products)

Gut Healing Diets: 

Gut Healing Diets Eliminating grains can often be the first stage in healing IBD, coeliac disease, IBS, Crohns, Colitis and Autism. Diets such as SCD, GF/CF & GAPS are useful to know about.

GF / CF: 

GF / CF Gluten and Casein both present challenges to the gut as proteins, and can induce an immune response. GF/CF cuts these out in an effort to reduce this. Gluten free grains can be used carefully and butter eaten freely. Watch that they don’t eat too many refined GF grains or dairy substitues.

SCD (specific carbohydrate diet): 

S C D (specific carbohydrate diet) Elaine Gottshall developed SCD, from the coeliac ‘banana diet’ used in the 1950s. No grains, starches or sugars are eaten (except raw honey). Intro period with restrictions Nut flours are used for breads Dairy is only consumed fermented until all lactose absent, or as butter

GAPS (Gut & Psychology Syndrome): 

GAP S (Gut & Psychology Syndrome) SCD developed into GAPS - a gut healing diet developed by Natasha Campbell McBride. Has an intro period consisting of low starch veg, animal fats, meat, fish and bone broths. Next fermented veg, egg yolk and nut butters are introduced.

GAPS and Autism: 

GAPS and Autism GAPS is used for Autism very successfully, but requires great commitment. Emphasis is on restoring gut flora with lacto ferments, encouraging elimination, rebuilding gut mucosa with fats and broths. Epsom salt baths and enemas can also be used as part of the programme.

Eating Disorders and B Vits: 

Eating Disorders and B Vits Vitamin B1 (thiamine) deficiency may be the root cause of many eating disorders (U.S.medical study). Sugar, caffeine and tannin deplete B1 Sources: oats, rice, asparagus, kale, cauliflower, eggs, liver, sunflower seeds. GAPS broth diet with fermented veg, egg yolk and veg juice can help.

Remedy Pictures and ANS Parasympathetic dominant (secretory, watery, GI tract & reproductive hormones, emotional, fatigue): Pulsatilla, Lachesis, Sulphur, Apis, Sepia, Folliculinum, Arg Nit, Stannum, Sympathetic Dominant (inhibitory, adrenal medulla, dry, driven, focused, cool emotionally): Nat-mur, Bryonia, Carcinosin, Thuja, Alum, Platina, Nux vomica, Staphisagria.

Parasympathetic Dominance: 

Parasympathetic Dominance Those ruled by their parasympathetic side need to eat slow burn foods because they turn fuel into glucose very quickly. Richer meats, more fats, low carb veg and very little fruit or grains . No sugar or alcohol! Sweet cravings are common - indicate not enough fat or fibre in their diet.

Sympathetic Dominance Those ruled by their sympathetic system need to remember to eat and stop relying on coffee and sweets. Lots of nutritious vegetables . Fish, pulses and lighter meats. Some carb with every meal - whole grain or starchy veg. Moderate fats - eggs, olive oil, avocado, butter Hydration is important, but not fruit juice or coffee.

Swingers (Mixed Types): 

Swingers (Mixed Types) These people swing from one extreme to another and need to eat a very varied diet in order to restore balance. If they only eat chicken breast & bread they will become parasympathetic dominant. If they only eat burgers and butter they will become sympathetic dominant. Encourage them to spread their food net wide & eat seasonally.

Oestrogen Dominance (prolonged cycle) Remove oestrogens from diet: plastics, soy, non organic meat & dairy, tap water, non organic veg. Balance blood sugar to encourage weight loss and decrease insulin resistance. Flax oil, cod liver oil & evening primrose oil for prostaglandin production. Red meat, oysters, wild fish (zinc) & saturated fats for prostaglandin production Rosemary, thyme and basil

PCOS: 

PCOS Follow diet for oestrogen dominance. PCOS and insulin resistance go hand in hand - add foods that contain chromium, magnesium and B vits. Inositol is important in reducing insulin resistance, but the major source is in phytic acid (indigestible) so it is crucial to include fermented grains/soy in the diet to make Inositol bio-available. Lecithin is also a source of inositol.

Progesterone Dominance (shortened cycle): 

Progesterone Dominance (shortened cycle) Can lead to failure of ovulation. Often with painful menses, low thyroid. Look at moon every day & bicycle Emphasise animal foods, eggs, fish roe. Eliminate soy, caffeine, sugar, refined grains, trans fats, processed food, alcohol. Reduce grains & give cod liver oil Ginger tea and bone broth

Endometriosis: 

Endometriosis Often combined with prolonged menstrual cycle due to excessive build up of reproductive hormones without breakdown and release. Vitamin A is crucial. High dose cod liver oil, butter, eggs, liver, shellfish. Balance blood sugar

Menopause: 

Menopause Treat the liver! Balance blood sugar, avoid caffeine, alcohol, and sugar. Go easy on fruit and eat bitter & sour foods, lemons, dark greens, sauerkraut. Hydration & cod liver oil Avoid soy Support spleen to move into the next phase of life: dancing, singing, massage, howling. Yellow/orange/red veg and slow cooked dishes, tagine. Ceanothus 3-6x or Quercus ø
