Lyophilization:

Lyophilization The lyophilization process is where perishable food or material is frozen and the water found in the material is sublimated – changing from a solid sate to a gas state without ever entering a liquid state. The water vapor is then removed, the material is lighter, more stable, and can be stored easier. Another term for the process is freeze-drying, or cryodesiccation.
