slide 2: In this article I will teach you how to make cinnamon chipotle
grilled buffalo wings. This is not a wing sauce recipe it is a
dry rub used on the wings before they are placed on the
grill. I will also explain how to increase the heat of the
flavor for this recipe.
slide 3: I always start with fresh uncut chicken wings. You can use pre-
cut frozen pieces if you want to save some time just make
sure that all of the wings are fully defrosted before you begin.
With fresh wings I open the package in the sink with cool
water running and cut the wing tips off then separate the
drum stick from the wing with poultry shears. I then rinse
each piece and place into a large mixing bowl. You want to
start with no more than about 20 wing pieces in the bowl
then add about ½ - 1 ounce of McCormicks Grill Mates
Sweet and Smoky Rub. Toss wings thoroughly in the mixing
bowl and add more rub as needed to coat all the wing pieces
well. Pour the coated wings into a separate bowl and repeat
this process as many times as needed for the amount of
wings you plan on grilling.
slide 4: Once you have some practice you should be able to toss more
than 20 wings at a time just make sure you have a large
enough mixing bowl so the rub doesnt end up splashing out
of the bowl all over the kitchen. Once you have all your
wings coated it is time to fire up the grill. You do not want to
let the wings sit after coating because the rub will start to
turn watery and drip off the chicken.
slide 5: Now that your grill is heated and ready start placing the wings
over the cooking surface of the grill with a small space
between each piece. I cook my wing on a medium low
temperature setting on the grill. You will need to flip the
wings often to avoid burning the rub. As the smaller wings
finish cooking first move them to the top rack of your grill as
you finish cooking the larger pieces. Chicken wings should
be cooked to a minimum internal temperature of 165
degrees. Once all the wings are cooked you are ready to
serve them.
slide 6: If you want to add some spice to the wings I recommend using
cayenne pepper. I usually mix the cayenne pepper about 1
ounce for every 3 ounces of rub used. You can experiment
with your own mixture for your taste though. I hope you enjoy
