Profitability :Profitability Measured through the menu item’s contribution margin Contribution margin = selling price – food cost Total Contribution Margin = item contribution margin x total items sold


Popularity :Popularity Measured through the menu item’s sales mix percent Sales mix percent = number of item sold ? total items sold


What Next? :What Next? Every menu item is compared To all in that section or to all total Labeled “high” or “low” profitability Labeled “high” or “low” popularity Items placed in performance classifications
