Double baked breads - Barley This is the most popular type of Paksimadi in Crete and has been so for hundreds of years. Made of stone-mill ground barley flour, according to researched recipes that have survived over the years, passed on from baker to baker, in remote inland villages of Crete. Stone-ground flour is responsible for this unique, "archetypal" appearance and distinctive taste. Abundant in fibre, this barley double-baked bread is a true gift for the human body: fibre, are the very nutrients that sustain good long-term health. Rye is the best choice by those who want a nutritious snack that contains all the beneficial ingredients bread can give you. Milder in taste, Rye double-baked bread is most suitable for diabetics* and/or those who suffer from constipation. Made of stone-mill ground wheat flour, this double-baked bread is fermented with leaven, an age-old technique that survives to this day, from the early stone stoves to our state-of-the-art, fully automated, stainless steel ovens! Leaven is discreetly present in taste, a slight, almost non-present feeling of acidity, so characteristic of this type of bread will harmoniously blend with any other food you accompany it with: tomato, olives, olive oil, oregano, white or yellow cheeses.

Following an old family recipe and made with selected, locally produced ingredients: homegrown wheat flour, extra virgin olive oil, slowly roasted, crunchy almonds and golden hued sultanas plus our carefully kept secret ingredients.
