The taste is rich and delicious and unlike any other kind of fish out there. This fish is also incredibly nutritious and is great for your health thanks to the Omega 3 fatty acids that salmon has. This recipe has become one of my family’s definite favorites and you will see why when you try it. Even if you are undecided about whether or not you like salmon you need to give this recipe a try. It is unusual to use orange and onion to flavor salmon but by roasting it first it changes the flavor and turns it into something that is truly special. Just remember to discard the oranges before the dish is served and garnish with the roasted onion slices.

http://www.freshwater-fishing-canada.com Ingredients ½ lbs fresh salmon fillets, skin removed 2 large oranges peeled and sliced 3 tablespoons fresh dill, chopped 1 lg. yellow onion sliced thinly ½ c. freshly squeezed orange juice ¼ c. green onions thinly sliced 1 ½ tablespoons extra virgin or virgin olive oil 1 ½ tablespoons freshly squeezed lemon juice

http://www.freshwater-fishing-canada.com To Prepare: Heat oven to 400F. Position orange slices from one orange in a single layer in a glass baking dish. Place layer of onion slices on top of orange slices. Drizzle orange and onion slices with olive oil and sprinkle with salt and freshly ground black pepper. Roast dish in oven for about 25 minutes. Onion should be brown and tender. Remove dish from oven. Increase oven temperature from 400F to 450F. Move onion and orange slices over to side of dish. Place salmon in center of glass dish and sprinkle with salt, more freshly ground black pepper and 1 ½ Tbsp of dill. Scoop orange and onion back on top of salmon fillets. Roast for 7 to 8 minutes or until salmon is opaque in center.

While fish is cooking, mix orange juice, lemon juice, green onions and the remainder of the dill in small mixing bowl. When salmon is cooked, transfer it from baking dish to platter. Discard orange slices but move onion slices so that they are arranged on the side of the salmon fillets. Pour orange sauce over fish and use remaining orange slices as a garnish.
