After roasting they take the shell or skin from the beans. What is left is called cocoa “nibs”. Then, they roast the cocoa nibs to give their characteristic aromas.
They put the nibs into special machines to become cocoa liquor. Cocoa butter melts and is now ready to make chocolate. :
