Types of Chocolates Chocolates are the most loved treat in the world. And if you don’t mind spending a little more than usual, you can get your hands on some fine chocolate. The quality of chocolates depends on the type of cacao beans used. The art of chocolate making involves sorting, roasting and grinding of cacao beans into a thick paste. Then ingredients like cacao butter, cacao nibs, milk and flavoring agents like vanilla is added to this mix.

Types of chocolates as per cocoa content: • Dark chocolate Chocolates made with higher cocoa content and pure cacao butter. • Milk chocolate This creamier variety of chocolates is made by diluting cocoa liquid with milk solids. • White Chocolate: This is made with pure cocoa butter, sugar and milk. No cocoa content is added to white chocolates

Regular chocolate Compound chocolate is made with vegetable oil and less amount of cocoa butter. This is a more economical variety of chocolates. • Couverture chocolate This type of chocolate is used for coating truffles and making praline shells. It is made with the choicest cocoa beans and has a high cocoa percentage. • Ultra-Couverture chocolate This type of chocolate is used by chocolatiers and pastry chefs for making confectioneries. • Gourmet chocolates These chocolates are hand-crafted by expert chocolatiers with exquisite ingredients and flavorings. Some gourmet flavors would be espresso chocolate, raspberry vanilla, Himalayan pink salt, etc. An assorted box of chocolate truffles is a great example of gourmet chocolate.

Types of chocolates as per taste: • Bitter chocolate Pure chocolate with no additional sugar has a bitter taste and used mostly for baking. • Bittersweet chocolate Darker variety of chocolate with minimal sugar addition. It tastes semi-sweet and can have added refined sugar, maple syrup, agave syrup or stevia in it. It is used for both baking and eating. • Semisweet chocolate It has a lesser amount of cocoa content and a higher amount of added sweetener. These chocolates taste semisweet and are a commercially popular variety of chocolate. Sweet Milk Chocolate It has a milder taste of cocoa than the dark chocolate variety. It is creamier in texture. • Baking chocolate This variety of chocolate is exclusively used for baking cakes, cookies, etc. • Unsweetened cocoa powder Dry powdered cocoa chocolate with the cocoa butter removed. It is used for hot chocolate and chocolate ganache
