For Pani:  Water: 4-5 cups  Mint leaves: 1/4 cup  Green chili: 2  Ginger: 1/2-inch piece  Amchoor powder: 1/2 tsp  Chaat masala:1/2 tsp  Cumin powder: 1/4 tsp  Black salt: a pinch  Boondi: for garnishing For Filling  Boiled potato: 1  Boiled black gram: 1/4 cup  Coriander leaves: 1 tsp chopped  Salt to taste For Puri Sooji or Semolina Wheat Flour Refine Oil

How to Make For Puri  Take sooji or semolina and mix 1 / 4 th cup of wheat flour and knead a dough. Apply one table spoon of refined oil and cover it with a moist cloth and leave it for 2 hrs.  Make a small ball from the dough and flatten it with a rolling pin.  Heat oil in a pan and fry the disc until turn golden red. For Pani  Grind mint leaves ginger and green chili.  Mix this paste in water with other ingredients like amchoor powder cumin powder black salt chaat masala  Allow it to rest for 2-3 hours.  Serve it by adding boondi in the mixture. For Filling  Mix all the ingredients and mash it properly with your fingertips.  Now make a whole on the top of the puri and put little filling inside the puri.  Now fill the ball with water you have prepared.  And eat it in one go.
