STAGE 1 Sugars- basic carbon and energy source Raw materials- beet and cane molasses, contains fermentable sugars , vitamins , salts, minerals. Supply of N 2 in form of NH 3 and phosphate in form of phosphoric acid.

YEAST TESTING:

YEAST TESTING Strain purity and trueness to type are carefully controlled Strict adherence to sanitary practices and GMP rules of the FDA are required Complete microbiological testing is conducted Tested for gassing activity - gassing a standardized dough formula at a constant-temperature in a precision gassing apparatus that measures the amount of carbon dioxide produced over a fixed amount of time.

TYPES OF BAKER’S YEAST:

TYPES OF BAKER’S YEAST Cream yeast :- Suspension of yeast cells in liquid, siphoned off from the growth medium. Used in industrial bakeries with special high-volume dispensing and mixing equipment. 2 . Compressed yeast :- Cream yeast with most of the liquid removed. Soft solid, beige in color. Highly perishable. More tolerant of low temperatures

3. Active dry yeast :- Choice for situations where long travel or uncontrolled storage conditions are likely. Consists of coarse oblong granules of yeast, with live yeast cells encapsulated in a thick jacket of dry, dead cells with some growth medium. More sensitive. 4. Instant yeast :- Similar to active dry yeast, but has smaller granules with substantially higher percentages of live cells. more perishable. Can usually be added directly to all but the driest doughs . Has a small amount of ascorbic acid added as a preservative. for example, LeSaffre's "SAF Instant Gold":
