How To Make Caramel Apple Pancakes Anthony Hofer

First, we’ll need to gather our ingredients : 

First, we’ll need to gather our ingredients (Serves 4) 2 Cups Buttermilk Pancake mix 1 Cup of Water 2 Apples 1 Cup Caramel 2 Cups Apple Cider or Apple Juice 1 Tbsp. Sugar Whipped Cream (Optional) Chopped Nuts (Optional) Brown Sugar (Optional)

For Apple Cider Reduction : 

For Apple Cider Reduction Take your apple cider (or apple juice) and pour into a medium size pan Put it over medium heat Add the sugar, and stir to make sure it thoroughly dissolves. If using apple juice, add 1 tbsp. lemon juice to ensure final product is not too sweet

For Pancake Batter : 

For Pancake Batter Put the mix into a bowl, and with a whisk slowly stir in the water. You’re looking for a slightly lumpy consistency, and it should be a little runny as well. You may need to add or hold back on some water to achieve this.

Time To Dice Some Apples : 

Time To Dice Some Apples Peel, core and cut 1 and a half apples into quarters Then dice into approximately 1 by 1 inch cubes Throw some of the apple peels into the apple cider reduction

Time To Slice Some Apples : 

Time To Slice Some Apples Thinly slice the half apple that is left over. This will be used for garnish later, so be sure to squirt some lemon juice over the slices to insure they don’t oxidize.

Cooking The Pancakes : 

Cooking The Pancakes Turn electric skillet up to 360 degrees Fold diced apples into batter Lightly grease skillet with cooking spray Slowly ladle approximately ½ cup of batter into skillet for each pancake. Cook in batches of 2 Cook for about 1 minute on each side, until golden brown When bubbles start rising to the top, the pancake is ready to be flipped.

Warm Up The Caramel : 

Warm Up The Caramel Throw the caramel into the microwave for about 20 seconds Meanwhile, the apple cider should be done by now. It is finished once reduced by half. Take of the heat and pour into a small bowl, straining out the apple peels

Plating : 

Plating First, swirl some of the caramel around the empty plate

Plating Then lay one pancake down atop the bed of caramel

Plating Now, drizzle some of the apple cider reduction over top, and gently rub it in

Plating Next add a dollop of whipped cream atop the lone pancake

Plating Stack another pancake on top, followed by a drizzle of apple cider reduction, and another dollop of whipped cream. Then top with chopped sundae nuts, brown sugar, or even cinnamon!

Plating : 

Plating To finish, fan out 3 of the thin apple slices and place them standing up atop the pancakes, resting upon the whipped cream
