Spelt Prairie Gold Bronze Chief ? ? ? ? ? ?Slide 2: Hi! I’m about to tell you about an experiment I did to find out how different kinds of wheat affect the finished bread. I tried making 3 different loaves of bread, using the same recipe for each loaf except that I used a different kind of wheat each time: Prairie Gold, Bronze Chief Wheat and Spelt. Here is how each of them turned out. Next>>Prairie Gold vs. Bronze Chief wheat dough: Prairie Gold vs. Bronze Chief wheat dough This is the Prairie Gold bread dough. It’s very soft, and easy to form after it’s been kneaded in the B osch. Notice how smooth the top is compared to the Bronze Chief wheat dough. This is Bronze Chief wheat dough. It’s not quite as easy to knead or form as the Prairie Gold, and it’s not as smooth on the top. Next>>How the Spelt dough turned out: How the Spelt dough turned out This spelt dough is acting a lot like the Prairie Gold dough. The only difference I see so far, outside of the color, is that the spelt dough is not rising quite as well. It’s very smooth on the top and every bit as easy to knead as the Prairie Gold dough. Here is how it turned out …The Finished Bread: The Finished Bread Spelt Bronze Chief Prairie Gold The Bronze Chief bread didn’t rise as high as the Prairie Gold bread, but it seems to have risen very evenly with even air holes. The spelt bread didn’t rise as well as the others but it has an interesting taste. It has kind of a nutty flavor. The Prairie Gold Bread rose higher than any of the others. It tastes good and has a nice texture, although most of my family agreed that they like the taste of the Spelt best. It didn’t rise as high as the Prairie Gold bread, but it still rose higher than the Spelt bread. I didn’t like the taste of the Bronze Chief bread as much as the others. It wasn’t a bad taste at all, it just didn’t have very much of the nice flavor that the others had. This is the kind of wheat most “whole wheat” breads are made of. Bronze Chief <<BackSlide 9: Spelt <<Back The Spelt bread tastes very different from any of the others. It definitely did not rise as high or as well as the Prairie Gold bread or the Bronze Chief. Spelt actually has less gluten in it than Prairie Gold or Bronze Chief wheat so that’s probably why it didn’t rise as well. It has an interesting flavor, slightly sweet and nutty. I think this is my favorite of all of these different kinds. SpeltSlide 10: Prairie Gold Whew! This one rose really high! Actually I’ve made even higher loaves with Prairie Gold flour. It always turns out very high. The thing I like about Prairie Gold bread is the texture. It’s always very light and it’s especially good fresh out of the oven, but it makes good sandwiches too. I like the Spelt bread’s taste the best but Prairie Gold bread has the nicest texture. <<Back Prairie Gold breadSlide 11: That’s how my bread turned out when I used all of one kind of wheat each time. Usually when I make bread I use a mix of all three different kinds of wheat: 2 parts Prairie Gold, 1 part Spelt and 1 part bronze ChiefSlide 12: Next>> Here’s a picture of a piece of bread I made with a mix like that.
