Yuksom : 

Yuksom BREWING PROCESS Beer is an alcoholic drink produced from Barley Malt, Water, Hops & Yeast. Brewing process involves the extraction and saccharification of starch and their conversion into alcoholic beer by fermentation process.

Malt : 

Malt The most important raw material for beer is barley. Its use depends on the fact that barley has a high starch content and its husk is able to provide the effective lauter tun filtration bed required for the subsequent beer production stage. Before use in the brewhouse, barley first has to be converted to malt. The malting process involves germination & drying of barley. During this process the starch gets modified & becomes `utilisable’ for the brewing process. In addition, enzymes are formed in the germinating barley corn which during mashing act as bio-catalysts in converting starch to sugar.

Adjuncts : 

Adjuncts Adjuncts are unmalted cereal products like Maize, Rice, Wheat, Barley or even Sorghum are often a part of the brewing materials used in the production beer. Adjuncts are used mainly for economic reasons. Adjuncts do not have natural enzymes in it. This limits the use of adjuncts along with malt to a maximum of 30%. If only adjuncts are to be used then use of external enzymes is required. It is also possible to add sugar directly during brewing, instead of procuring fermentable sugar through the splitting of starch during mashing. Since adjuncts are essentially starch with very little protein content, they are a source of additional alcohol, but otherwise contribute little to the colour, taste aroma, or protein content of the beer.

Brewers Yeast : 

Brewers Yeast The yeast acts as a catalyst during the conversion of sugar into alcohol by fermentation process. Traditionally, there are two types of beer yeast, based on their physical behavior: ale yeast (the "top-fermenting" type, Saccharomyces cerevisiae) and lager yeast (the "bottom-fermenting" type, Saccharomyces uvarum). Top-fermenting yeast flocculate and rise to the top of the fermenting wort producing a stable yeast head, while bottom-fermenting yeast flocculate and settle on the bottom of the fermentor.

Hops : 

Hops Hops is another raw material for beer production. Hops contribute the bitter taste and aroma components of beer. By hops the brewer understands the blossoms of the female hop plant, which grows wild in North and Middle Europe, North Asia, and North America. In India, hops are cultivated in J&K and Himachal Pradesh. The hop plant is perennial and produces a new wine each year. However in almost all breweries in India, now a days hops Pellets / Extract is used which is imported from UK or USA.

Water : 

Water Quantitatively the most important raw material is water. Of the water required, only a small fraction becomes part of the beer, while the far large quantity is used for cleaning and flushing, as well as for refrigeration condensers. The source and treatment of water is of particular importance for the brewer, since it strongly affects beer quality. However, the quality of utility water is just as important in ensuring the smooth operation of machines. The brewing water quality is normally decided by the brewer.
