Processed Egg Products The term "egg products" refers to eggs that are removed from their shells for processing. The processing of egg products includes breaking eggs, filtering, mixing, stabilizing, blending, pasteurizing, cooling, freezing or drying, and packaging.

Frozen Egg Products : 

Frozen Egg Products Whole Eggs or Yolks To freeze whole eggs or yolks crack them into a bowl and gently stir to break up the yolk somewhat. Try not to incorporate air into the eggs. To inhibit the yolks from getting lumpy during storage, stir in a 1/2-teaspoon salt per 1-cup of egg or yolks. Whites No salt or sugar is needed. Simply pour into trays and freeze until firm. Use up extra egg whites in boiled frostings (i.e., 7-minute frosting), meringue cookies, angel food cake, white cakes.

Many, but not all, varieties of dried egg whites are pasteurized, which means they don’t have the same concerns of possible Salmonella infection as do fresh eggs. This makes them excellent for recipes that call for the use of raw eggs.

Safe Handling and Storage of Egg Products : 

Safe Handling and Storage of Egg Products Check to be sure your freezer is set at 0 °F or lower. After thawing, do not refreeze. Thaw frozen egg products in the refrigerator or under cold running water. DO NOT THAW ON THE COUNTER. For liquid products without an expiration date, store unopened containers at 40 °F or below for up to 7 days (not to exceed 3 days after opening). Do not freeze opened cartons of liquid egg products. Unopened dried egg products and egg white solids can be stored at room temperature as long as they are kept cool and dry. After opening, store in the refrigerator. Reconstituted egg products should be used immediately or refrigerated and used that day.
