Ghee – “The essence of Milk”: 

Ghee – “The essence of Milk” “Samyog”: Unsalted Butter “Vishesh”: Requires no refrigeration. Will keep in a tightly sealed jar indefinitely. Always use a clean dry utensil to scoop out ghee. Moisture can quickly spoil ghee. It is easily digestible because the milk solids, proteins and sugars have been removed. ©2006 Adishakti, LLC. All Rights Reserved.

Ghee – “Sanskar”: 

Ghee – “Sanskar” In a heavy-bottomed saucepan, melt butter on med heat or in a double boiler. Be careful that it does not burn. Sediment forms in the bottom. Foam forms on top. When foam is Sunk, ghee is done. Strain immediately through cheesecloth. Ghee should be pure gold in color. Do not leave in the hot pot. Ghee burns very quickly. ©2006 Adishakti, LLC. Paneer (Fresh Cheese) “Samyog”: Whole organic milk - full fat. At least ½ gallon Fresh limes lemons “Vishesh”: You can add little acid, but not too much. Reduced-fat milk is harder to metabolize. Paneer – “Sanskar” In a heavy-bottomed pot bring milk to a boil. Add enough fresh-squeezed lime or lemon juice (Approx. 3 – 4 gallons). Sensible Smoothie “Samyog”: Fresh pineapple, skinned, cored and chopped 2. Fresh papaya, skinned, seeded and chopped Fresh-squeezed sweet orange juice “Vishesh”: Very medicinal Pineapple and papaya contain beneficial digestive enzymes and also enhance enzymatic properties. Weak digestion can cause constipation. Both pineapple and papaya increase estrogenic activity and are therefore contraindicated in pregnancy as they can cause miscarriage. Lime Pickle: 

Lime Pickle “Sanskara”: Juice all limes and thinly slice the flesh and skins. Place in a glass jar and cover with squeezed lime juice, salt and 2 tsp spice mix. Tightly cover with lid and leave out in sunshine for 15 days. (This is solar cooking.) ©2006 Adishakti, LLC. All Rights Reserved.

Chapati-type Bread: 

Chapati-type Bread “Sidhanta”: This bread will be light and easy to digest and will have the good properties of protein from yogurt and quinoa. However, through cooking we will lose the benefit of the probiotics from yogurt. The acid in the yogurt is also what activates the baking soda, providing leavening and resulting in a lighter bread. This recipe will not give any digestive problems as it is not heavy like an all-wheat flour bread. “Samyoga”: Equal parts Organic rice flour, Quinoa flour and Tapioca flour. 2 Pinches Baking soda. Pinch of Soma Salt. Yogurt – Just enough for moist dough. 1 t. Kalunji seed. ©2006 Adishakti, LLC. All Rights Reserved.

Chapati-type Bread – “Sanskara” Preheat oven to 400. In a bowl, combine the 3 flours, baking soda, salt and kalunji seeds. Mix in just enough yogurt to form a moist dough and combine well. Spread into patties approx. ¼” thick onto a well-greased cookie sheet (or one lined with parchment paper or, ideally, a Silpat®) Bake until golden brown and cooked through. ©2006 Adishakti, LLC. Cilantro Chutney “Samyog”: 1. 1 Bunch cilantro 2. Juice of 1 - 2 limes 3. 1 - 2 dates, pitted or 1 - 2 T. raisins (optional) 4. 1 Green Thai chili, seeded and chopped (optional) 5. 1 Bunch fresh mint (optional) 6. Water 7. ¼ C. Cilantro Chutney – “Sanskara”: 

Cilantro Chutney – “Sanskara” Combine first 5 ingredients in blender and puree. Scrape down sides periodically. Add water as necessary to attain a thin, smooth puree. With motor running, pour in olive oil in a slow stream to emulsify. Overblending will make olive oil bitter. Mung Dahl Chutney “Sidhanta”: Small beans like mung dahl are best. “Samyoga”: 1. 3 Handfuls dry-toasted mung dahl 2. Lime juice to taste 3. 1 t. Spice Mix 4. Soma salt to taste 5. Water “Vishesh”: Mung Dahl provides an essential amino acid – Arginine. Protein can be hard to digest with weak liver. Improper digestion of proteins can cause disease. Mung Dahl Chutney – “Sanskara” Grind the toasted mung dahl in coffee grinder until powdered. Regular grinder can also be adequate. Add powdered dahl to blender along with lime juice, spice mix, salt and water and puree to a smooth, creamy consistency. Adjust to desired consistency with water. Spice Puffed Rice Snack/Appetizer “Samyog”: 1. 4 fresh Curry Leaves (Sweet Neem) 2. 2 t. spice mix 3. Pinch chopped fresh ginger 4. Diakon radish, small dice 5. ½ C. Raisins 6. Puffed rice (or amaranth) 7. Ghee 8. Soma salt “Vishesh”: Sweet Neem (Curry leaf) has detoxifying effects on the liver. Mung Dahl (Soup/Side) “Sidhanta”: Small beans like mung dahl are best. Mung beans are green. Mung dahl is split and skinned. “Samyog”: 1. ½ C. Mung dahl 2. 1 -2 t. Spice mix 3. 1 - 2 T. Ghee 4. Mung Dahl (Soup/Side) – “Sanskara” Bring water to boil. In a separate pot, toast mung dahl in ghee until lightly browned. Add spice mix and soma salt and cook for another minute. Add hot water, cover and simmer until dahl is tender. Season with salt and pepper and chopped cilantro, if you like, and serve with a squeeze of fresh lime juice. ©2006 Adishakti, LLC. Saag Paneer: 

Saag Paneer “Sidhanta”: This is the real thing, using fresh spinach. More prana in fresh food. Fenugreek is the taste and metabolic enhancer. “Samyog”: 20% fresh fenugreek leaf 80% fresh spinach, washed but not dried. 2-3 Fresh curry leaves 1T. Chopped fresh ginger 2 t. whole cumin seed 1 t. Saag Paneer – “Sanskara”: 

Saag Paneer – “Sanskara” Melt ghee over medium heat and toast curry leaves, ginger, cumin, kalunji and spice mix until aromatic. Add fenugreek and spinach and cook covered, stirring occasionally until spinach is completely wilted and flavors have combined. Add a little water if mixture becomes too dry. Sweet Puffed Grain Dessert “Sidhanta”: Quick crunchy healthy sweet. “Samyog”: 1. 2 - 4 T. Ghee 2. 1 t. Fennel seed 3. 3 - 4 Green Cardamom pods 4. 1 Cinnamon stick 5. 2 C. Puffed grain (rice, amaranth, etc.) 6. 1 T. Shredded ginger root 7. 4 oz. Organic raw sugar “Vishesh”: This only takes 5 minutes to make and is light and healthy. Puffed Grain Dessert – “Sanskara” In a heavy-bottom pot over low heat, melt ghee. Add fennel seed, cardamom, and cinnamon and cook until aroma is released. Add puffed grains and shredded ginger. Office Kicheri “Sidhanta”: Avoid skipping or delaying meals! Have a fresh, hot healthy lunch ready to eat at the correct time, when your digestive fire (agni) is at its peak. “Samyog”: 1. 2 Sweet potatoes, skin on, cut lengthwise into wedges 2. 2 T. Ghee, melted 3. 1T. Spice mix 4. 1 T. Ground cumin 5. 1 t. Ground kalunji (optional) 6. 1t. Ground ajwain (optional) 7. Juice of 1 lime 8. Soma salt 9. Ground black pepper ©2006 Adishakti, LLC. Office Kicheri – “Sanskara” Combine all ingredients except for salt in a crock pot or slow-cooker before you leave for the office in the morning. Upon arrival at work, turn on the crock pot and add enough water or broth to just cover all ingredients. Cover and cook according to cooker’s instructions. Irresistible Sweet Potato “Fries” “Samyog”: Sweet potatoes, skin on, cut lengthwise into wedges 2 T. Ghee, melted 1T. Spice mix 1 T. Ground cumin 1t. Ground ajwain (optional) Juice of 1 lime Soma salt Ground black pepper ©2006 Adishakti, LLC. All Rights Reserved.

Irresistible Sweet Potato “Fries” – “Sanskara”: 

Irresistible Sweet Potato “Fries” – “Sanskara” Preheat oven and sheet tray to 475. In a large bowl toss the sweet potato wedges with melted ghee to coat and season with salt and pepper. Lay wedges in a single layer, cut sides down, on hot sheet tray and bake at 475 for approx. 8-10 minutes. While potatoes are baking, combine spice mix, cumin, kalunji and ajwain in a small bowl. Check potatoes and turn them over when bottom side had turned golden brown. When potatoes are fully cooked, remove from oven and toss in large bowl with spice mixture, lime juice, salt and pepper to taste. Serve Hot. ©2006 Adishakti, LLC. All Rights Reserved.

Salty Healthy Snack “Sidhanta”: Providing tasty, crunchy snack, for optimal health. Main ingredient is phool makhana, which nourishes sukra dhatu. “Samyog”: phool makhana, 16 oz D.D.’s Spice, 1 t.
